VFW 7890 and Lions Club Teaming for St. Patrick’s Day Dinner Fundraiser

The VFW Post 7890 and the Cadiz Lions Club are teaming up this week to continue a March tradition and celebrate St. Patrick’s Day.

The ladies auxiliary of the VFW post and the Lions Club will be having a corned beef and cabbage fundraiser on Thursday at the post located at 37 Lafayette Street.

While corned beef and cabbage isn’t the national dish of Ireland, the first generation of Irish-Americans were in search of meals that were less expensive than the pork. They chose beef and cured it with corn-sized salt crystals during the brining process. Cabbage was chosen because it was one of the cheapest vegetables available to the immigrants.

Karle Johnson with Post 7890 says the menu will be one familiar on St. Patrick’s Day.

click to download audioThursday’s lunch will be from 11 to 2 and dinner will be from 5 to 6:30 at the post headquarters. It will be dine-in or carry-out, and they will deliver meals totaling eight or more with a single order.

Charlotte Brown with the Lions Club says they haven’t been able to have the same number of pre-covid fundraisers as before, but they are still working behind the scenes to raise money for their community projects.
